About the Chocolate I am by no means an expert "chocolatier", but I have taken a few classes. I LOVE chocolate and I feel I can not do justice to the berries by using a "candy coating" to dip the berries in. I use Lindt, Ghirardelli and Toblerone chocolate. I buy the same gourmet chocolate you would, but I add paramount crystals and temper it to give it that wonderful sheen that won't crack and fall off your berries. The milk chocolate has about 50% cocoa and the dark starts at 60% cocoa. If you have a favorite type, let me know. I will be glad to make them special for you. |
