  • ¾ –1 cup warm water added gradually
  • 2¼ teaspoons instant yeast
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • ¾ teaspoon salt

Method
 

  1. Prepare the ingredients: Drain the cooked beans and lentils, mash them until smooth, and measure the flours into a large mixing bowl.
  2. Mix the dough: Combine the warm water, instant yeast, honey, mashed legumes, olive oil, and salt. Gradually stir in the flour mixture until a soft, slightly tacky dough forms.
  3. Knead the dough: Knead on a lightly floured surface for 8–10 minutes, until the dough becomes cohesive and smoother. Add extra flour sparingly.
  4. Let it rise: Place the dough in a lightly oiled bowl, cover, and leave in a warm spot for about 60–90 minutes, until visibly expanded.
  5. Shape the loaf: Gently press out large air pockets, shape the dough, and place it in a greased 8-by-4-inch loaf pan.
  6. Rise again: Cover loosely and let the dough rise for another 25–40 minutes, until slightly puffed.
  7. Bake the bread: Bake in a preheated 350°F oven for 35–45 minutes, until browned and cooked through. Check the center if needed.
  8. Cool before slicing: Rest in the pan for 10 minutes, then transfer to a wire rack and cool completely before cutting.

  • Use plain cooked beans and lentils without heavy seasoning.
  • Add water gradually because flour absorption and legume moisture vary.
  • Expect a hearty, relatively dense loaf rather than a fluffy white sandwich bread.
