Ingredients

  • Frozen fully cooked meatballs
  • Beef broth
  • Ranch seasoning mix
  • Au jus gravy mix
  • Unsalted butter
  • Pepperoncini peppers
  • Pepperoncini juice

Equipment

  • Instant Pot
  • Measuring cups
  • Measuring spoons
  • Wooden spoon or silicone spatula
  • Serving bowl

Method

  1. Add the frozen meatballs: Place the fully cooked frozen meatballs into the Instant Pot. There is no need to thaw them first.
  2. Add the liquid: Pour the beef broth and pepperoncini juice around the meatballs.
  3. Add the seasonings: Sprinkle the ranch seasoning and au jus gravy mix evenly over the meatballs.
  4. Add butter and peppers: Cut the butter into smaller pieces and distribute it over the meatballs. Add the pepperoncini peppers.
  5. Pressure cook: Secure the Instant Pot lid and cook according to the recipe's specified pressure-cooking time.
  6. Release the pressure: Allow the pressure to release according to your Instant Pot method before carefully opening the lid.
  7. Coat the meatballs: Stir the meatballs gently so the buttery gravy coats them evenly.
  8. Adjust the sauce: Let the sauce stand briefly. If it is thinner than preferred, use the sauté function with the lid off for a short time to reduce it.
  9. Serve: Serve warm over mashed potatoes, rice, or egg noodles, or serve with toothpicks as an appetizer.

Notes

  • Use fully cooked frozen meatballs: They can go directly into the Instant Pot without thawing.
  • Watch the salt: Ranch seasoning, au jus mix, broth, and meatballs may already contain significant sodium.
  • Don't skip the pepperoncini juice: It adds acidity that balances the richness of the butter and gravy.
  • Check the sauce before adding salt: Taste after cooking and adjust only if needed.
  • For appetizers: Smaller meatballs are easier to serve with toothpicks.
  • For dinner: Mashed potatoes and egg noodles are especially good with the extra gravy.
